SERVES 2-4
INGREDIENTS:
100g (½ cup) popcorn kernals
2 tablespoons coconut oil
Zest of 2 unwaxed limes
2 handfuls of coconut flakes
Preheat fan oven to 125°C (gas mark 1 / 275°F)
METHOD:
Heat a pan on a medium-low heat. Add the coconut flakes and heat until they are starting to brown, stirring every now and then. Once the flakes have gone a light brown colour (this should take 2-3 minutes) take them off the heat.
Now make the pop corn.
If using a pop corn machine: pop the popcorn kernels according to the machine instructions. Pop 100g (½ cup) of plain popcorn kernels.
If using a microwave: pour 100g (½ cup) popcorn kernels into a large glass bowl, cover with a vented lid. Microwave on high for 3-4 minutes. When there is a 2 second gap between each pop, the popcorn is done.
Melt the coconut oil in a small saucepan and add the Modern Nature Liquid Stevia Drops Sweetener - Coconut. Pour the coconut stevia glaze over the popcorn and toss it through.
Pour into the baking tray and bake for 15 - 20 minutes. This gives the popcorn a great crunch. Take the popcorn out of the oven and sprinkle over the zest of 2 limes.
