Spooktacular Halloween Monster Cookies (Sugar-Free with Stevia)

These spooktacular monster cookies are made with Modern Nature's liquid stevia drops instead of sugar, making them a lighter treat without losing the fun. Ingredients (makes ~12 cookies):

  • 1½ cups rolled oats
  • ¾ cup peanut butter
  • 2 tbsp butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • Pinch of salt
  • 32 drops Modern Nature liquid stevia (adjust to taste)
  • ⅓ cup sugar-free chocolate chips
  • ⅓ cup Halloween candies (or sugar-free colored candies)

Instructions:

  1. Preheat oven to 350 °F (175 °C) and line a baking tray.
  2. In a bowl, mix peanut butter, butter, egg, vanilla, and stevia until smooth.
  3. Stir in oats, baking soda, and salt.
  4. Fold in chocolate chips and Halloween candies.
  5. Scoop dough into balls, flatten slightly, and place on the tray.
  6. Bake for 10–12 minutes, until edges are set. Let cool on a rack.
