CHOCOLATE & STRAWBERRY GRANOLA
MAKES 4 LARGE PORTIONS
3 teaspoons 100% Cocoa powder
100g (1 cup) Rolled oats or Gluten free oats
100g (1 cup) Jumbo oats or Gluten free oats
50g ( ½ cup) Desiccated coconut
2 tablespoons Nut butter (cashew or which ever you prefer)
1.5 tablespoon coconut oil
50g (½ cup) flaked/chopped almonds (blanched or with skins are fine)
15g (½ oz). sliced freeze dried strawberries
Preheat fan oven to 150°C (gas mark 3/ 300°F). Line a baking tray. In a large mixing bowl place the cocoa powder the rolled oats, jumbo oats and desiccated coconut. Mix together.
Next add the Nut butter and coconut oil and Modern Nature Liquid Stevia Drops Sweetener - Chocolate. Using a fork or your hands work the nut butter and coconut oil into the oat mixture. Pressed together with your hands until the mixture resembles crumbs.Now add the almonds, cinnamon and vanilla.
Pour into your lined baking tray. Bake for 30-40 mintues turning the granola half way through.
Once cooked remove from the oven and leave to cool before adding the freeze dried strawberries.
